Beetroots are rich in dietary nitrates which convert in the body to nitric oxide to help increase blood flow to working muscle.
This recipe is high fibre, vegetarian, vegan and gluten free. Each tablespoon contains 213kJ (50 cals), 4g carbs, 2g protein, 2g fat and 2g fibre.
- 400g can of cannellini beans, drained and rinsed
- 200g pre-cooked baby beets
- 2 tb extra virgin olive oil
- 2 tb fresh lemon juice
- 1 large garlic clove
- Salt and pepper to taste
Blend in a high-speed blender. Enjoy with vegetable sticks or wholegrain crackers as a snack.
