TOAST TOPPERS

Bored of the same old toast? Jazz up your daily bread with these super-quick toast toppers that make a well-rounded meal guaranteed for long lasting energy.

Serves: 1-2 slices of toast

FIG BRUSCHETTA

  • 1-2 tbsp ricotta
  • 1-2 fig, sliced
  • 1 tbsp flakes almonds
  • ½ tsp cinnamon
  • Honey or preferred sweetener

Cook toast of choice, top with ricotta, fig slices, crushed almonds, and a drizzle with cinnamon and honey.

GREEN TOAST

  • 1/4 avocado
  • 1-2 tbsp kale pesto (see method below)
  • 1 tbsp sunflower seeds

Cook toast of choice, top with kale pesto (see recipe), avocado slices, sprinkle with sunflower seeds.

To pre-make the kale pesto, add a handful kale leaves (stems removed), handful of parsley, 6 raw almonds, 2 tbsp olive oil, ½ tsp garlic (minced), a pinch of  sea salt and squeeze of fresh lemon juice into a food processor and process until broken down and well combined. Pesto can be stored in the fridge in an airtight container for up 4 days.

SMOKED SALMON WITH LEMON CAPERS

  • 1-2 slices of smoked salmon (30g)
  • 1 tbsp goat’s cheese
  • 3 ribbons of cucumber (use vegetable peeler)
  • 1 tbsp capers, drained
  • Fresh lemon juice

Cook toast of choice, top with goat’s cheese, smoked salmon, cucumber ribbons, capers, and a squeeze of lemon juice.

SALTED CARAMEL BANANA & CHIA

  • 1 tbsp tahini
  • ½ banana, sliced
  • 1 tsp chia seeds
  • Honey or preferred sweetener
  • Pinch of salt

Cook toast of choice, top with tahini, banana slices, chia seeds and drizzle with honey and a pinch of salt.
